  • 1 cup rice
  • 4 cups chicken broth
  • 1 tablespoon ginger, grated
  • 1 tablespoon turmeric
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 2 stalks celery, diced
  • 1 lemon, juiced
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery, sauté until vegetables are tender.
  3. Stir in garlic, ginger, and turmeric; cook for another minute.
  4. Add chicken and broth, bring to a boil.
  5. Reduce heat, add rice, and simmer until chicken is cooked through.
  6. Remove chicken, shred it, and return it to the pot.
  7. Stir in lemon juice, season with salt and pepper.
  8. Serve hot.
