  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, mash the bananas with a fork until smooth.
  3. Stir in the melted butter until combined.
  4. Add baking soda and salt, and mix well.
  5. Stir in sugar, egg, and vanilla extract until combined.
  6. Add ground cinnamon and flour, and mix just until incorporated.
  7. If using, fold in chopped walnuts.
  8. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool for a few minutes before removing from the tin.
