Maple Dijon Chicken & Roasted Sweet Potato Bowls

  • 2 chicken breasts
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 pound sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix together maple syrup and Dijon mustard.
  3. Coat chicken breasts in the maple Dijon mixture and set aside.
  4. Chop sweet potatoes into cubes, toss with olive oil, salt, pepper, garlic powder, and paprika.
  5. Spread sweet potatoes on a baking sheet and roast for 25 minutes.
  6. In the last 10 minutes of roasting, add the chicken to the baking sheet.
  7. Once fully cooked, remove from oven and let rest before slicing.
  8. Serve chicken over roasted sweet potatoes.
