- 2 chicken breasts
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 1 pound sweet potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Preheat oven to 400°F (200°C).
- In a bowl, mix together maple syrup and Dijon mustard.
- Coat chicken breasts in the maple Dijon mixture and set aside.
- Chop sweet potatoes into cubes, toss with olive oil, salt, pepper, garlic powder, and paprika.
- Spread sweet potatoes on a baking sheet and roast for 25 minutes.
- In the last 10 minutes of roasting, add the chicken to the baking sheet.
- Once fully cooked, remove from oven and let rest before slicing.
- Serve chicken over roasted sweet potatoes.
