  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups cooked rice

Instructions

  1. In a large pot, combine chicken broth and water, and bring to a boil.
  2. Add chicken breasts, carrots, celery, onions, and garlic to the pot.
  3. Season with thyme, rosemary, salt, and pepper. Simmer for 20 minutes until chicken is cooked through.
  4. Remove chicken, shred it, and return to the pot.
  5. Add heavy cream and cooked rice, stirring to combine. Cook an additional 5 minutes.
  6. Serve hot.

Notes

  • You can substitute chicken thighs for the breasts if preferred.
  • Adjust the thickness by adding more or less cream.
