- 3 ripe bananas
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup chopped walnuts or pecans (optional)
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the honey (or maple syrup), applesauce, and vanilla extract to the mashed bananas, mixing well.
- In another bowl, combine the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
- If using, fold in the chopped nuts.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
- For added sweetness, you can sprinkle a little extra cinnamon on top before baking.
- These muffins freeze well; store them in an airtight container.
