Mini Banana Muffins (No Refined Sugar)

Delicious and healthy mini banana muffins made without refined sugar, perfect for a snack or quick breakfast.

Ingredients

  • 3 ripe bananas
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the honey (or maple syrup), applesauce, and vanilla extract to the mashed bananas, mixing well.
  4. In another bowl, combine the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. If using, fold in the chopped nuts.
  7. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 12-15 minutes or until a toothpick comes out clean.
  9. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • For added sweetness, you can sprinkle a little extra cinnamon on top before baking.
  • These muffins freeze well; store them in an airtight container.
