  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, baking soda, baking powder, cinnamon, ginger, and salt.
  3. In another bowl, whisk together the sugars, oil, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the shredded carrots and walnuts.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
