  • 1 teaspoon vanilla extract

  • 1/2 cup brown sugar
  • 1/3 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas. Stir in the melted butter.
  3. Add baking soda and salt. Mix well.
  4. Add sugar, egg, and vanilla extract. Combine thoroughly.
  5. Mix in flour until just incorporated.
  6. In a separate bowl, combine brown sugar, rolled oats, and cinnamon for the crumb topping.
  7. Spoon the muffin batter into the prepared muffin cups and sprinkle the crumb topping on each.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
