- 1/3 cup melted butter
- 1 teaspoon baking soda
- 1 pinch salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/3 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas. Stir in the melted butter.
- Add baking soda and salt. Mix well.
- Add sugar, egg, and vanilla extract. Combine thoroughly.
- Mix in flour until just incorporated.
- In a separate bowl, combine brown sugar, rolled oats, and cinnamon for the crumb topping.
- Spoon the muffin batter into the prepared muffin cups and sprinkle the crumb topping on each.
