Monterey Chicken One Pan Orzo

A delicious and simple one-pan recipe featuring Monterey chicken and orzo, enhanced with turkey bacon for a rich flavor.

  • 1 pound Monterey chicken breasts
  • 4 slices turkey bacon
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. In a large skillet, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same skillet, add the Monterey chicken and sear on both sides until golden.
  3. Add orzo, chicken broth, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir to combine.
  4. Bring to a simmer, cover, and cook for about 15 minutes or until orzo is tender.
  5. Stir in crumbled bacon and cheese, if using. Cook until cheese is melted.

Notes

  • For a spicy kick, add red pepper flakes.
  • Substitute chicken broth with vegetable broth for a vegetarian option.
