No Bake Pumpkin Cheesecake Bars

An easy and indulgent dessert that captures the essence of fall with creamy pumpkin cheesecake.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup whipped cream, for topping

Instructions

  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9×9 inch pan.
  2. In another bowl, beat together the cream cheese, pumpkin puree, powdered sugar, vanilla, and spices until smooth.
  3. Spoon the pumpkin cheesecake mixture over the crust and spread evenly.
  4. Chill in the refrigerator for at least 4 hours or until set.
  5. Once set, top with whipped cream and cut into bars.

Notes

  • For a richer flavor, use dark brown sugar in the crust.
  • Store any leftovers in an airtight container in the refrigerator.
