- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes with chipotle peppers
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 teaspoon smoked paprika
