One-Pan Honey Butter Garlic Chicken & Rice

A delicious and easy recipe for One-Pan Honey Butter Garlic Chicken & Rice, perfect for a weeknight dinner.

Ingredients

  • 4 pieces chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup mixed vegetables

Instructions

  1. In a large pan, heat the olive oil over medium heat and season the chicken thighs with salt and pepper.
  2. Sear the chicken on both sides until golden brown. Remove and set aside.
  3. In the same pan, add butter and garlic, sauté for about a minute.
  4. Add honey, rice, and chicken broth. Stir well.
  5. Return the chicken to the pan, cover, and simmer until the rice is cooked and chicken is fully cooked.
  6. Add mixed vegetables during the last few minutes of cooking.
