  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 large eggs
  • 1/2 cup cream cheese, softened
  • 1/4 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, brown sugar, baking powder, baking soda, salt, and spices.
  3. In another bowl, mix the pumpkin puree, eggs, and milk until smooth.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Top each muffin with a dollop of cream cheese mixture.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For a richer flavor, use fresh pumpkin puree instead of canned.
  • You can add chocolate chips for an extra treat.
