  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese frosting

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until fully combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Add cream cheese frosting to the top of each muffin.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool before enjoying.
