Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, pumpkin spice, baking powder, and salt.
  3. In another bowl, mix pumpkin puree, milk, oil, and eggs until well combined.
  4. Gradually add the wet mixture to the dry mixture and stir until just combined.
  5. In a small bowl, mix brown sugar and cinnamon for the filling.
  6. Divide half the muffin batter into the prepared muffin tin, sprinkle with the cinnamon filling, and then top with the remaining batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
