  • 1 cup canned pumpkin puree
  • 1/2 cup cream cheese, softened
  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine sugar, pumpkin puree, vegetable oil, and eggs until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fill each muffin cup 2/3 full with batter and add a dollop of cream cheese on top; swirl gently with a toothpick.
  6. Bake in preheated oven for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a more spiced flavor, consider adding 1/4 teaspoon of ground ginger.
