Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix together the dry ingredients: flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, combine the wet ingredients: sugars, pumpkin puree, oil, and eggs.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. In a small bowl, beat the cream cheese until smooth. Spoon a small amount of muffin batter into each liner, followed by a dollop of cream cheese, then top with more batter.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
