These Pumpkin Gobs are the perfect treat for fall, combining soft pumpkin cookies with creamy filling.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup canned pumpkin puree
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese, softened
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together the sugar, pumpkin puree, oil, vanilla, and eggs until well combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Drop tablespoons of dough onto a baking sheet.
  6. Bake for 15-20 minutes until a toothpick comes out clean.
  7. For the filling, mix together the powdered sugar, cream cheese, and milk until smooth.
  8. Once cookies are cool, spread filling on half of the cookies and top with the remaining cookies.

Notes

  • Try adding chocolate chips or nuts for variation.
