- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 cup granulated sugar
- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup powdered sugar
- 2 tablespoons cream cheese, softened
- 2 tablespoons milk
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat together the sugar, pumpkin puree, oil, vanilla, and eggs until well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Drop tablespoons of dough onto a baking sheet.
- Bake for 15-20 minutes until a toothpick comes out clean.
- For the filling, mix together the powdered sugar, cream cheese, and milk until smooth.
- Once cookies are cool, spread filling on half of the cookies and top with the remaining cookies.
