Pumpkin Muffins with Crumb Topping

These delicious pumpkin muffins topped with a crunchy crumb topping are the perfect cozy treat for fall!

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts (optional)
  • ½ cup crumb topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla until combined.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in the nuts if using.
  5. Fill each muffin cup about 2/3 full with batter and top with crumb topping.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack.

Notes

  • Store leftover muffins in an airtight container for up to 3 days.
  • These muffins freeze well—just thaw before serving!
