  • 1 teaspoon baking soda
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the pumpkin puree and softened butter.
  3. Add in the brown sugar, egg, and vanilla extract, mixing well.
  4. In another bowl, combine the flour, graham cracker crumbs, pumpkin spice, and baking soda.
  5. Gradually combine the dry ingredients with the wet ingredients until fully mixed.
  6. Fold in the mini marshmallows.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes, or until golden.
