Pumpkin S’mores Cookies

These Pumpkin S’mores Cookies are the perfect fall treat, combining the flavors of pumpkin with the classic s’mores experience.

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the pumpkin puree, brown sugar, and granulated sugar with the softened butter.
  3. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix well.
  5. Fold in the mini marshmallows and chocolate chips.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until golden brown.
  8. Let cookies cool on the baking sheet before transferring to a wire rack.

Notes

  • For extra flavor, add a pinch of allspice to the dough.
  • These cookies are best served warm.
