Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, granulated sugar, brown sugar, and softened butter until well combined.
  3. Add eggs one at a time, mixing until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, cream of tartar, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. In a small bowl, mix sugar and cinnamon for rolling.
  7. Shape the dough into balls and roll in the cinnamon-sugar mixture.
  8. Place on baking sheets and bake for 10-12 minutes or until edges are lightly golden.
  9. Let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
