Pumpkin Spice Gooey Cake Brown Sugar Icing

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 cup pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix together the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, beat the sugars and oil until well combined, then add the eggs and pumpkin puree.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes.
  6. For the icing, combine brown sugar, butter, and cream in a saucepan and cook until bubbly.
  7. Pour the icing over the warm cake and let it cool before serving.

Notes

  • For a richer flavor, you can add chopped nuts or chocolate chips to the batter.
  • Leftover cake can be stored in the refrigerator for up to a week.
