  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and 1 teaspoon of vanilla extract and mix until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let cookies cool before frosting.
  9. To make the frosting, beat together cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth.
  10. Frost cooled cookies with cream cheese frosting.

Notes

  • For a spicier cookie, add more cinnamon or even a bit of clove.
