- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1 cup black beans, rinsed
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/2 cup avocado, diced
- 1/2 cup turkey bacon, cooked and crumbled
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- salt and pepper to taste
- In a large bowl, combine the mixed greens, cherry tomatoes, corn, black beans, red onion, and bell pepper.
- Add the diced avocado and crumbled turkey bacon on top.
- In a separate small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Garnish with chopped cilantro and serve immediately.
Notes
- For extra heat, add diced jalapeños.
