  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 cup sour cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until combined.
  3. Press this mixture into the bottom of a springform pan to form the crust.
  4. In another bowl, beat the cream cheese and granulated sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Fold in the blueberries gently.
  7. Pour the cheesecake mixture over the crust in the springform pan.
  8. Bake in the preheated oven for about 45-50 minutes.
  9. Once done, remove from the oven and let it cool completely.
  10. In a separate bowl, mix the sour cream and powdered sugar, then spread it on top of the cooled cheesecake.
  11. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a more intense blueberry flavor, feel free to add more fresh blueberries.
