Simply Carrot Cake Cupcakes

  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tray with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the grated carrots.
  6. Divide the batter evenly among the cupcake liners.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool before serving.
