Smashed Egg Toasts with Herby Lemon Yogurt

Ingredients

  • 2 large eggs
  • 2 slices whole grain bread
  • 1/2 cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh herbs (parsley, dill, or chives)
  • 2 slices turkey bacon
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Set aside.
  2. In the same skillet, poach or fry the eggs to your preference.
  3. In a bowl, mix the Greek yogurt with lemon juice, chopped herbs, salt, and pepper.
  4. Toast the bread until golden brown.
  5. Spread the herby lemon yogurt on the toast, top with the smashed eggs, and garnish with crispy turkey bacon.
