  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water until tender, about 15-20 minutes.
  3. Drain the potatoes and place them on a baking sheet.
  4. Using a potato masher or fork, gently smash each potato.
  5. In a pan, cook the turkey bacon until crispy. Crumble and set aside.
  6. Drizzle the smashed potatoes with olive oil and sprinkle with garlic powder, salt, and black pepper.
  7. Bake in the preheated oven for 20-25 minutes until crispy.
  8. Remove from the oven and top with crumbled turkey bacon and fresh parsley.
