- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup chocolate chips (optional)
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, sugar, and brown sugar until smooth.
- Add pumpkin, eggs, and vanilla; mix well.
- In another bowl, combine the flour, baking soda, baking powder, spices, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, fold in the chocolate chips.
- Drop rounded tablespoons of dough onto a baking sheet.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
