  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, drained and chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooled pasta, spinach, artichokes, cherry tomatoes, red onion, feta cheese, and black olives.
  3. In a separate small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to coat evenly.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
