Sri Lankan Egg Curry

This Sri Lankan Egg Curry is packed with flavors, combining spices with the richness of eggs for a comforting meal.

Ingredients

  • 6 large eggs
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 can coconut milk
  • salt to taste
  • fresh coriander for garnish

Instructions

  1. Boil the eggs in water for about 10 minutes. Once cooked, peel and set aside.
  2. In a pan, heat vegetable oil over medium heat.
  3. Add chopped onions, garlic, ginger, and green chilies, sauté until onions are translucent.
  4. Stir in curry powder and turmeric powder, cooking for another minute.
  5. Pour in the coconut milk and bring to a simmer.
  6. Add the boiled eggs gently into the curry and simmer for 5 minutes.
  7. Season with salt and garnish with fresh coriander before serving.

Notes

  • This curry can be made milder by reducing the number of green chilies.
  • Serve it with rice or bread for a complete meal.
