- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- 1 can coconut milk
- salt to taste
- fresh coriander for garnish
- Boil the eggs in water for about 10 minutes. Once cooked, peel and set aside.
- In a pan, heat vegetable oil over medium heat.
- Add chopped onions, garlic, ginger, and green chilies, sauté until onions are translucent.
- Stir in curry powder and turmeric powder, cooking for another minute.
- Pour in the coconut milk and bring to a simmer.
- Add the boiled eggs gently into the curry and simmer for 5 minutes.
- Season with salt and garnish with fresh coriander before serving.
Notes
- This curry can be made milder by reducing the number of green chilies.
- Serve it with rice or bread for a complete meal.
