  • 4 cups cabbage, shredded
  • 1 apple, thinly sliced
  • 1/4 cup cranberries
  • 1/4 cup walnuts, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon lemon juice

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add chicken thighs and sear until browned.
  3. In a bowl, combine apple cider, vinegar, mustard, garlic, thyme, and salt.
  4. Pour the mixture over the chicken and simmer until cooked through.
  5. In a separate bowl, mix together slaw ingredients: cabbage, apple, cranberries, walnuts, mayonnaise, honey, and lemon juice.
  6. Serve the chicken warm with the crisp autumn slaw.

Notes
