  • 4 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 1/2 cup apples, diced
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine apple cider, brown sugar, Dijon mustard, soy sauce, cinnamon, black pepper, and salt.
  3. Add chicken thighs to the bowl, ensuring they are well coated with the marinade.
  4. Place the chicken in a baking dish and pour any remaining marinade over the top.
  5. Bake for 45 minutes or until the chicken is cooked through.
  6. While the chicken is baking, mix together the cabbage, carrots, and apples in a separate bowl.
  7. In a small bowl, whisk together apple cider vinegar, olive oil, and honey for the slaw dressing.
  8. Pour the dressing over the slaw and toss well to combine.
