Strawberry Crumble Cheesecake

A luscious dessert combining creamy cheesecake with a crumbly strawberry topping.

  • 1 ½ cups digestive biscuits, crushed
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups fresh strawberries, sliced
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 cup rolled oats
  • ½ cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the crushed digestive biscuits with melted butter and press the mixture into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. In a separate bowl, combine strawberries, brown sugar, and cinnamon.
  7. Pour the strawberry mixture over the cheesecake.
  8. In another bowl, combine oats, flour, and any leftover brown sugar.
  9. Spoon the crumble mixture over the strawberries.
  10. Bake for 45-50 minutes or until the center is set.

Notes

  • Let the cheesecake cool completely before removing from the springform pan.
  • For extra flavor, add a splash of lemon juice to the strawberry mixture.
