Street Corn Pasta Salad

A creamy and flavorful street corn pasta salad with a delicious twist of turkey bacon.

  • 8 ounces pasta
  • 4 slices turkey bacon
  • 1 cup corn kernels
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In a large bowl, combine the pasta, corn, red onion, bell pepper, and crumbled bacon.
  4. In a separate bowl, mix the mayonnaise, Greek yogurt, lime juice, chili powder, and salt.
  5. Pour the dressing over the pasta mixture and toss to combine.
  6. Garnish with fresh cilantro before serving.

Notes

  • For extra flavor, add some diced jalapeño.
  • Can be served warm or chilled.
