- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
- In another bowl, sift together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in walnuts if using.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
