3 ripe bananas
1/3 cup melted coconut oil
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1 1/2 cups all-purpose flour
1/2 cup chopped walnuts
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, mash the bananas and mix in coconut oil and vanilla.
Add baking soda and salt, then stir in sugar.
Gradually add the flour, mixing just until incorporated.
Fold in chopped walnuts.
Pour the batter into a greased muffin tin.
Bake for 20-25 minutes or until a toothpick comes out clean.
