  • 1 cup grated carrot
  • 1 cup mashed banana
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the grated zucchini, grated carrot, and mashed banana.
  3. In another bowl, combine the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the vegetable mixture until evenly distributed.
  7. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool for a few minutes before transferring to a wire rack.
