  • 1/2 cup fresh lime juice
  • 1/4 cup fresh mint leaves
  • 2 tablespoons honey or agave syrup (optional)
  • 2 cups sparkling water
  • Ice

Instructions

  1. In a blender, combine the watermelon cubes and lime juice. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a pitcher.
  3. Add the mint leaves and honey or agave syrup, if using. Stir well to combine.
  4. To serve, fill glasses with ice and pour the watermelon mixture over the ice. Top with sparkling water.
  5. Garnish with additional mint leaves and lime wedges if desired.
