Ingredients

  • 2 cups butternut squash, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup spinach, chopped
  • 1 cup kale, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cranberries, dried
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash in olive oil, salt, and pepper, and roast in the oven for about 25 minutes or until tender.
  3. In a large bowl, combine spinach, kale, red onion, cranberries, feta cheese, and walnuts.
  4. Add the roasted butternut squash and crumbled turkey bacon to the salad.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
