  • 4 strips turkey bacon
  • 1 cup corn, grilled
  • 1/2 cup red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook turkey bacon until crispy. Crumble and set aside.
  3. In a large bowl, combine cooked pasta, grilled corn, red onion, cherry tomatoes, avocado, and cilantro.
  4. In a separate bowl, mix mayonnaise, lime juice, chili powder, and salt. Stir until well combined.
  5. Add dressing to the pasta mixture and toss to combine.
