  • 1 pound salmon fillets
  • 1 cup panko breadcrumbs
  • 2 tablespoons mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 teaspoon sriracha
  • 2 cups steamed rice
  • 1 cup mixed vegetables
  • 2 tablespoons green onions, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the salmon fillets into bite-sized pieces.
  3. In a bowl, mix panko breadcrumbs with a pinch of salt.
  4. Dip salmon pieces in mayonnaise, then coat with panko.
  5. Place salmon on a baking sheet and bake for 12-15 minutes, or until golden.
  6. While salmon is baking, prepare steamed rice and mixed vegetables.
  7. In a small bowl, mix together sweet chili sauce and sriracha.
  8. To assemble, place rice in bowls, top with salmon, vegetables, and drizzle with sauce.
