  • 1 pound salmon fillets
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 tablespoon honey
  • 2 cups cooked rice
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • 1 teaspoon sesame seeds

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine mayonnaise, sriracha, and honey to make the Bang Bang sauce.
  3. Coat the salmon with the sauce and then dredge in panko breadcrumbs.
  4. Place on a parchment-lined baking sheet and bake for 12-15 minutes.
  5. While the salmon is baking, steam the broccoli.
  6. Serve the salmon bites over rice and broccoli, drizzling with extra sauce and sprinkling with sesame seeds.

Notes

  • For extra crunch, broil the salmon for the last 2 minutes of cooking.
  • Adjust sriracha to taste for desired spice level.
