Caribbean Chicken and Rice

  • 2 cups long-grain rice
  • 1 pound chicken thighs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup diced tomatoes
  • 1 cup bell peppers, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic; sauté until translucent.
  3. Add chicken thighs and brown on all sides.
  4. Stir in rice, coconut milk, chicken broth, thyme, paprika, black pepper, and salt.
  5. Add diced tomatoes and bell peppers, then bring to a boil.
  6. Reduce heat, cover, and simmer for about 20 minutes, or until rice is cooked.
  7. Finish with lime juice and fluff with a fork before serving.

Notes

  • For extra flavor, marinate the chicken in spices overnight.
  • Serve with avocado or a side salad.
