  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin.
  2. In a bowl, combine oats, flour, brown sugar, chocolate chips, baking powder, baking soda, and salt.
  3. In another bowl, whisk together milk, oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just blended.
  5. Fill muffin cups about 3/4 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.
