Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, combine the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a small bowl, combine the brown sugar and cinnamon for the filling.
  6. Fill each muffin cup halfway with batter, sprinkle with the cinnamon filling, and top with remaining batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
