1 pound chicken breast, sliced
8 ounces fettuccine pasta
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 cup heavy cream
1 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 cup green onions, sliced
Salt to taste
Pepper to taste
Instructions
Cook the fettuccine according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chicken and sprinkle with Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes.
Add garlic and sauté for 1 minute until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted.
Add the cooked pasta and toss to coat. Mix in green onions.
Season with salt and pepper to taste. Serve hot.
Notes
For extra spice, add more Cajun seasoning.
This dish can easily be made with shrimp instead of chicken for a different flavor.
