  • 1/4 cup chopped nuts for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Add baking soda and salt, then stir in sugar, beaten egg, and vanilla extract.
  5. Mix in the flour until just incorporated.
  6. Pour the batter into muffin cups, filling each about 2/3 full.
  7. Sprinkle oats and chopped nuts on top of each muffin.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
