Homemade Blueberry Protein Muffins

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1 cup fresh blueberries
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/4 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the whole wheat flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the Greek yogurt, honey, eggs, and almond milk until well blended.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter into muffin tins lined with cupcake liners.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For extra sweetness, add a tablespoon of sugar.
  • Make sure to gently fold the blueberries to avoid breaking them.
