Ingredients

  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound salmon fillet
  • 4 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add the salmon fillet to the skillet and cook for 4-5 minutes on each side, or until cooked through.
  4. Remove salmon from the skillet and flake into chunks.
  5. Add spinach to the skillet and cook until wilted.
  6. Stir in heavy cream, salt, and pepper.
  7. Add the cooked pasta and salmon back into the skillet. Toss to combine.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • Garnish with grated Parmesan cheese if desired.
